This will only be the first of a couple of posts about pizza related things. I thought the best start would be my favourite pizza sauce recipe. It kind of developed out of trying different recipes, that I found online and in various cookbooks in my slightly obsessive search for the best pizza sauce.
This one is slightly sweet, but not even a bit overly sugary tasting, like a lot of the bottled pizza sauces are and it is pureed for making it easier to distribute on the dough.
It is very important to simmer the sauce for a while, thus allowing the flavours to combine and the acetic acid (from the balsamic vinegar) to evaporate. You don’t want the balsamic vinegars acidity, you just want some of its flavour!

Quick, easy, delicious. I mean it’s actually kind of weird posting a “recipe” for this, but still, I think it’s just very tasty and everyone should be making these more often. The home-made balsamic reduction really adds some amazing flavour to the whole thing.
You can eat these (with your hands please!) just by themselves or with some lettuce and ranch or yogurt dressing.

So, we decided to eat more vegetables and light, fresh stuff for the next week or two. The last weeks were kind of filled with a lot of red meat, fat and almost no fresh vegetables. Well at least it wasn’t enough. Tonight I started with a roasted tomato and arugula salad with some slices of oven roasted chicken, marinated with olive oil, garlic and thyme.
Oven roasted tomatoes are always a nice thing, especially in the winter, when tomatoes aren’t that great in general. The roasting really brings out the natural flavour and sweetness of the tomatoes, even if they just tasted like water before.
