Spicy Peanut Noodle Stir-Fry.

This is a perfect quick snack noodle dish you can prepare in like 10 minutes if lunch (or dinner, of course) has to happen very fast. You can always add meat, vegetables and/or condiments of your choice, like bamboo shots, chicken or even fried/poached/scrambled egg. Add a little less sriracha and even kids will love it.

Ingredients:
1 cup natural peanut butter, smooth
1/4 cup dry sherry
1/2 cup coconut milk
1 cup water
2 tbsp. sriracha
1 tbsp. soy sauce, light
1 tsp. soy sauce dark
1 tbsp. brown sugar
2 cloves of garlic
thumb sized piece of ginger (or more if you love ginger like I do)
juice of one lime

any kind of asian noodles
2 tbsp. grapeseed oil
1/2 cup scallions, chopped
a handful of peanuts, chopped

Boil the noodles according to package instructions. Meanwhile, mince garlic and ginger and add to a medium bowl with peanut butter, sriracha, sherry, water, coconut milk, lime juice, sugar and both kinds of soy sauce. Mix until smooth. Heat grapeseed oil in a wok over high heat until almost smoking, add the noodles and fry until lightly browned. Add scallions, chopped peanuts and peanut sauce and mix until well combined. Serve immediately topped with some more chopped scallions and peanuts.
